That local tradition of grilling fresh seafood simply, with little more than salt and smoke, inspires the live seafood station we set up at private villas across Marbella and Málaga, built around whatever's freshest at the market that day.
Espeto Sardines, Done Properly
Espeto sardines are skewered on cane and cooked at an angle over embers, traditionally olive wood, until the skin crisps and the flesh stays soft. It's simple, fast and unmistakably local. We set this up as a live station so guests can watch the whole process and eat them straight off the skewer, the way they're meant to be enjoyed.
Octopus, Prawns and Salmon Boards
Beyond sardines, grilled octopus with a light char, whole prawns cooked in their shells, and salmon finished on cedar or plancha all bring variety without complicating the menu. Served on large sharing boards with lemon, good olive oil and simple herbs, they let the seafood's flavour do the work rather than heavy sauces, and suit any occasion from a lunch to a full banquet.
